A Look Back...And Ahead!!! : )

*look at me, two posts in a row! Starting the year off right :)

This year went by sooo fast it's not even funny!

Here is a little flashback of my year!





  • Tyler's First Birthday! Even though he's turning 2 soon, I can still close my eyes and it takes me back to the day we met our little man.


  • My 5 year reunion. It was probably the only high school reunion I will ever attend. It wouldn't be surprising to any of my readers that I would rather not think of high school again!


  • I turned 23!


  • All the holidays, wedding, anniversaries, birthdays, and breakups.


  • Fun times at the Gasconade!


  • The loss of Matt's uncle.


  • My first craft fair!


  • and so much more too miscellaneous to mention!


Things I'm looking forward to in 2012!





  • Tyler's 2nd Birthday party!!! I'm not as sad this time. When he turned one, I was actually kind of sad- no kidding. But this time it's more fun. It's sad to see him growing up- but then again, it's fun to see him learn new things and communicate with us more.


  • I will turn 24!


  • More fun times at the Gasconade!


  • Lots of holidays, anniversaries, and birthdays!


  • (hopefully) plan for a little brother or sister for Tyler!


  • I plan on getting a different vehicle this year. Just have to find the right one- at a great price!


  • And I have no clue what else the year will have in store for me!


Not saying that 2011 was a horrible year... but I have to say I'm ready to say goodbye to it and hello to a fresh start!

New Years Resolutions!

Well, we all made it to 2012 (in 30 minutes!)

So I guess wrong on how I wouldn't be back until the new year. Tyler ended up getting the flu tonight- we think he caught it from Jake, who was throwing up on Thursday night @ Ron's house- but we still went to mom and dad's house for dinner. Dad insisted we still came, I think he just wanted to see Tyler. I went home afterwards and Matt went to a friend's house. He came home early though. Luckily Tyler is in a good mood - other than when he's throwing up of course- .. I have been scared to get the flu all week. I did not want to miss out on the last week of tax season. I'm actually surprised I haven't gotten it, since I've handled a lot of money and talked to a lot of people. I guess I'm not out of the woods yet!

So I am spending the New Year watching reruns of King of Queens and updating my blog. I think this is more fun then going out anyways : )

Onto my resolutions!

Here are some of my 'goals' that I have set for myself for the year!








  • Scrapbook more. I have the software to do digital scrap booking, but it just doesn't fit well with me. Because I like to do my scrap booking after Tyler goes to bed, and since the computer is in our room, sometimes it's a little too loud for him. And my aunt gave me some free scrapbooks. So my goal is to work on it every other night or so. But I don't want to do so much of it that I get tired of it either.



  • Eat better. I am still planning on eating a little of everything- but in moderation. I LOVE food- especially junk food. So I'm going to try to just cut back a little. For my health and my confidence both!



  • Make my first quilt. I really want to make Tyler a quilt for his toddler bed. I've been researching it online, and it looks as if you keep it simple it shouldn't be that difficult. And I already know it won't be perfect. But I've always liked the phrase "it's unique" : )



  • Get a hairstyle. I've never had a real hairstyle. And now that I'm growing out my bangs, I would love to have one of those hair cuts with the bangs swept to the side. I will post pictures sometime so you can see what I'm talking about.



  • Getting more physical activity. I walk when the weather is nice, but I need to do more to get in shape. I might try to schedule in a few workouts before work.



  • Make more freezer meals. These are so handy. Especially since when I'm cooking dinner I'm on my own since Matt doesn't get home until later. So it's handy to not have to spend forever in the kitchen when I could be playing with Tyler!



  • Read the Bible. I hate to say it, but I haven't even opened my Bible in years. I know right where it is (in my nightstand) but I can't say I've attempted to read it. (I think this is right if not, sorry, I must remembering someone else :) ..I remember years ago at church Pastor Karen saying how her daughter would read one page a night in her Bible. I'm thinking of doing the same thing.



  • Make a monthly meal plan. I'm pretty good at this already. But every now and then I'll get a craving for something else and have to make a last minute run to the store- wish I hate to do!



  • Use the speed limit more often! I don't speed like I used to, but I still drive over the speed limit. I've been lucky and I've never gotten an actual ticket- and I want to keep it that way!



  • Get up earlier and arrive on time to work. What I like to call my "morning brain" always thinks it is a good idea to get push "snooze" a few times. Which doesn't turn out to be a good idea!! I'm usually running around getting dressed and ready for work, and getting Tyler ready, and then dropping him off at Daycare. So I'm going to try to make it to where I'm not stressed out from getting everything round up in the morning!



  • Split the chores. Matt offers his help to me quite often. But I kind of live by the motto "If you want something done right, do it yourself" :) ... but sometimes ALL of the chores become a bit much. So I think I'll make a few that he can do and a few I can do, and then I won't be so overwhelmed by them every week.



  • Worry less about cleaning and more about playing! (funny to put this one after the previous one!) I sometimes get caught up in making the house look perfect other than playing with Tyler, so I'm going to think less of things that need done!



  • Spending freeze. Nothing drastic, but I'd like to get into a budget where we really watch what we spend. Like only buying what we need. And using more coupons, etc.



  • And just taking life one day at a time. Enjoying the company of family and friends. Trying to make life slow down a little. And just being thankful for every day I'm given.




For those of you still with me- what can I say, I'm in the typing mood tonight I guess!- I don't know if I'll accomplish all of these goals I have set for myself. But all I know is it's going to be a great one. No better way to say it other than, life is good.. I have no complaints.

See Ya'll Next Year!

Since the chances of me having time to post anything before the New Year on Sunday aren't very likely, I decided I'd sign off until 2012!

I have soooo many posts I want to post!! Here's a sneak peak of what's coming!





  • Lots and LOTS of pictures!!! I think I've taken a hundred over the Christmas weekend (kidding, of course!)


  • New Years Resolutions! I made a list of things I want to work on! And it's not all about dieting, etc. I put some thought into the list!

  • What I'm looking forward to in 2012!


  • Lots of recipes from the holiday season!

Christmas Weekend Recap!

Work has been CrAzY this week!! I can't believe we're down to two days left of the tax season!

Here's a rundown of what our Christmas was like!

Friday- went home and cleaned the house- was glad to have it done before the weekend!

Saturday- went into work for an hour or so during Tyler's nap. I was able to get caught up with the mail!

That afternoon, I made beer bread, dip, 2 different kind of cookies for Santa, and little smokies wrapped in bacon.

For dinner, we went to mom and dad's house. It was good time and great food! We also went to church- Matt went to the Catholic service before we went to ours and he then watched Tyler when we went to church. After church we opened gifts. I loved everything I got!

Sunday- Woke up early and opened presents and looked at what Santa left! Then had breakfast at my house. Everyone had a good time and the food was good also!

We went to the Rowden event that afternoon. I made a new kind of potatoes for it, they turned out great!

Monday- enjoyed a day off of work! Didn't do anything too important. It was nice to just enjoy the day! Ron had to cancel dinner because of him getting the flu. But we rescheduled and had it tonight.

This week -

Tuesday- Wednesday- work was busy, busy, busy! I wish it was like this more often!

Thursday- had dinner with Matt's family tonight. It was so good! We had prime rib! The kiddos (minus Jake) had fun playing hide-and-seek and opening gifts. Jake and Allison left because he got sick again. He had the flu earlier this week.

Friday- Plan on the being the busiest day at work!

Saturday- working till noon. That evening we have dinner at mom and dad's (can't wait!) and then a New Years Eve party to attend, which Tyler will be going with us to!

Cake Batter Truffles

I made these Cake Batter Truffles for Matt's work party last week. I think they turned out great!! And I might even like them better than cake balls!!

Here's the recipe!




recipe from: Landee See, Landee do (I found it on Pinterest- big surprise there!)

1 1/2 c flour
1 cup yellow cake mix
½ cup unsalted butter, softened
½ cup white sugar
1 teaspoon vanilla
1/8 teaspoon salt
3-4 Tablespoons milk (says the girl, but I actually ended up using close to 1/4 cup)
2 Tablespoons sprinkles

Vanilla Melting ChocolateBeat together butter and sugar using an electric mixer until combined. Add cake mix, flour, salt, and vanilla and mix thoroughly. Add 3 Tablespoons of milk or more if needed to make a dough consistency. Mix in sprinkles by hand. Roll dough into one inch balls and place on a parchment or wax paper lined cookie sheet. Chill balls in the refrigerator for 15 minutes to firm up.
While dough balls are chilling, melt vanilla melting chocolate and then dip away! Place them on wax paper to set up, top with additional sprinkles and you're done!
Chill cake batter truffles in the refrigerator until serving. Makes around 24-30 truffles.

Weekend Plans!

Friday- I plan on getting all my house cleaning done tonight so I don't have to stress about it all weekend!

Saturday- Christmas Eve- I plan on running into work to do the mail in the morning. And then doing some baking and getting stuff ready for Christmas Eve dinner and Mom and Dad's house.

That evening we have dinner, church, and presents! Can't wait!

Sunday- Waking up early to see what Santa brought and opening presens!! Can't wait!

I won't make it to church. I am having my family over for breakfast! We're making omlets in a bag- will post on how it goes!

That afternoon we have the Rowden Christmas!

Monday- day off!! No plans all day- just recovering from the long (but fun) weekend! For dinner we are going to Ron's to have Christmas with them!

I hope everyone has a great weekend and a wonderful Christmas!

Starting a business began with one small decision or idea.


Saving your marriage started with the realization that it was worth saving.


Parenting your children began the day you chose to love them more than yourself.


Our lives are not measured by the leaps and bounds as much as they are measured by the little steps and decisions that we make each day.


But in this world of fast food, instant downloads, get-rich-quick schemes, Twitter streams, and never-ending media hype, those standing at the finish line often receive the praise… while those on their journey are often overlooked. Or even worse yet, those on the journey long for the finish line at the expense of the little steps that must be taken to get there. The prize at the finish line dangles precariously… and the number of steps between here and there is rarely counted accurately.


We must adjust our thinking. It is entirely appropriate to praise those who have successfully completed positive life change, but we must also celebrate those still on their journey. Each step forward is worthy of celebration. And when we see it in our lives or in the lives of others, we must call it what it is – a victory worthy of celebration.


The father who comes home and picks up his child rather than the remote control deserves celebration.


The alcoholic who chooses to attend one more AA meeting deserves celebration.


The husband drowning in debt who packs a lunch for work deserves celebration.


The consumer-driven wife who chooses to not buy that extra pair of shoes deserves celebration.


The thief who earns his first honest dollar deserves celebration.


The woman struggling with her weight that chooses to take the stairs deserves our celebration.


The anorexic who eats a full meal deserves our celebration.



The wealthy man who writes his first check to charity (no matter the amount) deserves our celebration.



The sexaholic who admits that lust has become an addiction and needs help deserves celebration.


The hoarder who cleans one drawer deserves celebration.



The family on brink of divorce that unselfishly sits down at the kitchen table to finally talk it over deserves celebration.


We are a people in need of grace. We are a people in need of patience. And we are a people in need of encouragement. Let’s be quick to celebrate the little steps in both our lives and the lives of those around us. Because life is only fully-lived in the little moments and the big.

Gifts for the kids at daycare

I made some goodie bags for the kiddos at Daycare. I also made some for Tyler's three cousins too!


I found this idea on Pinterest. It's just chex mix and I printed off the label online.







I thought it was cute!




I put a cup and a juice in every ones bag. Along with some candy and candy canes.



I made initial bags with glitter and stickers. I made them when it was dark in the kitchen (aka after Tyler went to bed) so they look a little like Tyler might of put them together!! LOL



I made some peanut butter cookies for the kids to snack on. They were having a pj party and watching the Polar Express!

Peanut Butter Stuffed Pretzel Bites

These are one of the things I made for my work party. Everyone loved them!!

My only complaint is that I felt like they looked odd after being sat out for a bit, since they are in the refrigerator, and the chocolate kind of 'sweated'.. but no one seemed to notice.. you can tell a little in the picture.

Anyways.. here's the recipe!


Peanut Butter Stuffed Pretzel Bites

Recipe From: I found on Pinterest. But it originally came from Two Tiny Kitchens.
Yield 60 – 80 pretzel bites

Ingredients

1 cup creamy peanut butter
2 tbsp softened butter
1/2 cup powdered sugar (maybe more)
3/4 cup brown sugar (maybe more)
Pretzels
1 bag semi-sweet chocolate chips

Directions

Combine peanut butter and softened butter in a large bowl with a fork or whisk, or in a stand mixer. Add the sugars and mix to combine. At this point if the filling will roll easily into balls without sticking to your hands you’re ready to go. If not, add a little more of each sugar until you reach a consistency that is easy to roll (I used about 3/4 cup of each sugar).
Use a teaspoon measure to scoop the filling. Roll each portion into a small ball, then sandwich them between two whole pretzels. When all the balls are rolled and successfully sandwiched, stick the whole tray in the freezer for about half an hour.
Pour the chocolate chips into a microwave safe bowl and heat at 30-second intervals, stirring occasionally until completely melted. Remove the pretzel sandwiches from the freezer and quickly dip each half-way into the melted chocolate. Return to the tray and repeat with remaining sandwiches. When all are dipped, return the tray to the freezer to set up completely. Store the sandwiches in the refrigerator until serving time.

Cinnamon Sticks

Another recipe! LOL


I found a recipe for cinnamon sticks on Pinterest. I LOVE Pizza Hut's, so I had to try these!

I also made a cheese pizza- it turned out to be the best cheese pizza-ever!! I made the crust, and added sauce, parmesan cheese, garlic powder (very lightly), mozzarella cheese and topped with parsley. It was great!! And tasted just like the pizza the school used to have! Yum!

And it looked pretty! : )



Here are the cinnamon sticks.. I think next time I won't add as much of the topping mixture.. it was a little too much.. it was good though!


Cinnamon Sticks
Recipe from: Once again, I found it on Pinterest; but it came from Jam Hands originally.




prepared dough, rolled out into a square or circle


buttered flavored oil - I just used melted butter!


2 tsp. cinnamon


1/2 c. sugar




Icing:several cups powdered sugar


small splash of milk


1 Tbsp. melted butter


1/4 tsp. vanilla extract




1. Preheat oven to 350-f degrees.




2. Using a perforated roller (preferably) or a pizza cutter, cut the dough into strips. Brush the dough with the flavored oil. Bake for about 15 minutes until cooked through, keeping a close eye on it so it doesn't over bake. Remove from oven. While the dough is baking, prepare the icing by combining the icing ingredients in a mixing bowl and set aside.




3. Combine the sugar and cinnamon in a small bowl and stir together well. Sprinkle the mixture over the warm dough. Drizzle with the prepared icing. Serve warm.
